Eureka Rye flour is 100% pure rye with no wheat blended into it. Many people who are wheat intolerant find they can handle rye better as it has a lower gluten content. Rye flour is high in roughage that promotes healthy bowel movement, is exceptionally rich in nutrients and has a 10% protein content. Very fine. Like cake flour. I use it combined with other flours. I'll buy again, but mostly because it is difficult to find rye flour where I live. Would like if it was a bit coarser. Still tastes good and gives me amazing bread. I specifically bake a Norwegian wholemeal bread with this flour
this flour is my go-to of choice for making sourdough rye every second day, and all the Eureka flours are a good choice.
Because it has less gluten than wheat, it's difficult to work. I'm still learning how to make Rye only baked gods but it's going well. I like the extra flavour it adds. It's also great for starting a sourdough starter because of the higher nutrition value.
A reliable and delicious staple for sourdough rye bread. Cannot live without this flour in my pantry. I use it in nearly all my experimental bread mixes because it adds another dimension in flavour.
Use this flour almost exclusively to feed my sourdough started. It's amazing quality and I love that it's a healthy flour with a lot of nutrients.
