Recipe for Flourless Pecan Butter Cookies:
Ingredients:
- 1 cup ButtaNutt Pecan & Macadamia Nut Butter
- 1 cup organic sugar
- 1tsp pure vanilla extract
- 1 large egg, lightly beaten
- Coarse sea salt, for sprinkling
Method:
- Preheat oven to 350°F. Line a baking tray with parchment paper & set aside.
- Combine the nut butter, sugar, vanilla & egg in a bowl until well-mixed.
- Spoon 1Tbsp dollops of the mixture onto your baking sheet. Flatten the top of each one gently with a fork.
- Sprinkle a little coarse salt on top of each cookie.
- Bake until golden around the edges (about 10 minutes). Cool on a wire rack, serve & enjoy!

Because it comes unsalted and unsweetened, I like to occasionally modify it a bit, e.g. by adding a bit of salt. I sometimes mix the paste into a drink (with almond milk) but mostly just eat it neat. I'm on a low carbohydrate gluten-free dairy-free diet, and this fits in pretty well.
There's a wonderful sweet note that comes through from the Pecans, and together with the richness of the macadamia, makes this nut butter a real treat.
Very stirable and doesn't thicken up hard at the base.
I enjoyed it with oats today
I can't recommend this because of small pieces of pecan nut shell (those bits that often stay behind in the folds of the nut) that I've bitten on a number of times. I fished a piece out this morning that was only a little smaller than the head of a pin. Also, the ingredients as listed on the site is incorrect, in fact it's 50% pecan nut and 50% macadamia, which dominates the flavour profile. Overall very disappointing.
Since a friend introduced me to ButtaNutt it has become my favourite quick snack. I love eating a spoonful (or 2) as a treat. It's a great healthy snack. I enjoy all the flavours, but the Pecan Macadamia definitely is my favourite!
Love this stuff - honestly, the big jar is just too much of a temptation.
